Ingredients :
- 1 White or Yellow Onion, chopped
- 1 tablespoon Extra Virgin Olive Oil
- 2 Carrots, diced
- 2 Celery Stalks, chopped
- 2 Garlic Cloves, minced
- 1 teaspoon Dried Oregano
- 1 Bay Leaf
- 1 teaspoon Dried Basil
- 1 (14.5 ounces) can Crushed Tomatoes
- 2 cups Dry Lentils
- 8 cups Water
- 1/2 cup Spinach, rinsed and thinly sliced
- 2 tablespoons Vinegar
- Salt, to taste
- Fresh Ground Black Pepper, to taste
Preparation :
- Add the carrots, onion and celery to a large soup pot with oil and sauté over medium heat until the onions are tender.
- Add the garlic, bay leaf, oregano and basil and sauté for 2 minutes.
- Add the next 3 ingredients and bring the mixture to a boil.
- Lower the heat and simmer for 1 hour.
- Add the spinach and stir until it wilts.
- Add the vinegar, salt and pepper.
- Serve and enjoy.
