White Bean and Pasta Soup Recipe

Ingredients :

2 quarts Chicken Broth
3 cans Cannellini Beans
1/4 cup Fresh Rosemary
3 Fresh Garlic Cloves
1 tablespoon Tomato Paste
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
1 pound Ditalini Pasta
2 teaspoons Extra Virgin Olive Oil
Grated Romano Cheese (optional)

Preparation :

1. Mince the rosemary and slice the garlic and place in a small bowl.
2. Sauté the garlic in olive oil in a large pot over medium heat.
3. Sauté for 30 seconds then add the broth and bring to a boil.
4. Add the beans with juices, tomato paste, salt and pepper and mix well.
5. Reduce the heat to medium low and simmer for 8 minutes.
6. Bring a large pot of slightly salted water to a boil.
7. Add the pasta and cook until al dente.
8. Drain, rinse and drain again.
9. Add the pasta to the pot of beans and add salt and pepper to taste.
10. Serve sprinkled with Romano cheese.

2 cans Tomato Soup
1 (15 ounces) can Italian Style Diced Tomatoes, un-drained
2 cups Water
1/4 cup Rotini Pasta
3 Canadian Bacon Slices or Pepperoni, chopped
1/2 cup Croutons
1/4 cup Shredded Mozzarella Cheese

Preparation:

1. Add the soup, tomatoes, water, pasta and pepperoni to a crockpot and stir well to blend.

3. To serve, place a few croutons in each soup bowl, ladle the soup over the croutons and sprinkle the cheese on top.

4 ounces Thick Cut Bacon Slices, roughly chopped
2 tablespoons Olive Oil
1 tablespoon Butter
1-1/2 pounds thinly sliced Sweet Onions

3. Simmer the onions until golden, partially covered, which takes about 20 minutes.
4. Reduce the heat and add the remaining ingredients.
5. Bring the pot to a boil and cook for 30 minutes, stirring often.
6. Before serving, add the basil and test for seasonings, adding more salt and pepper as desired.
7. Serve hot, sprinkled with Parmesan cheese and more basil.

1 tablespoon Butter
1 medium Red Bell Pepper, cut into strips
1 teaspoon finely chopped Fresh Garlic

Preparation :

1. Add the butter, garlic and pepper to a 4 quart saucepan and sauté over medium high heat until crisp tender, which takes about 2 to 3 minutes.
2. Add the frozen veggies, meatballs, beef broth and Italian seasoning and bring the mixture to a boil, about 10 to 12 minutes.
3. Reduce the heat to medium, add the egg noodles and cook until tender, which takes about 5 minutes.
4. Serve topped with shredded parmesan cheese.

4. Stir in the chicken bouillon, salt and pepper.
5. Add butter to separate small saucepan. Melt over medium heat.
6. Whisk in flour with a wooden spoon or, and cook, stirring constantly until thick, about 2 minutes.
7. Reduce heat to low.
8. Gradually add milk ¼-cup at a time, stirring constantly, about 5 minutes.
9. Stir the milk mixture into the soup.
10. Cook until heated through.

Bean and Ham Soup Recipe

Ingredients  :

1 pound Dried Navy Beans
2 small Onions
8 cups Water
4 cups cubed Fully Cooked Lean Ham (1-1/2 pounds)
2 smoked Ham Hocks
2 cups chopped Celery
1 cup chopped Carrots
1/2 teaspoon Dried Basil
1/2 teaspoon Pepper

Preparation:

1. In a Dutch oven, add the beans and enough water to cover them by 2 inches.
2. Bring the beans to a boil, then boil for 2 minutes.
3. Remove the Dutch oven from the heat.
4. Cover and allow to stand for 4 hours or until the beans have softened.
5. Chop one onion into bite size pieces.
6. Slice a second onion and separate the pieces into rings.
7. Set the onions aside.
8. Drain the beans and rinse, throwing the liquid away.
9. Return the beans and onions to the pan.
10. Add the remaining ingredients.
11. Turn the pan to medium heat and cook for 1 hour, covered.
12. Remove the cover and cook for an additional 30 minutes.
13. Remove the ham hocks.
14. Serve and enjoy.

Bean Soup Recipe

          Presoaked beans are combined with chopped onion, minced garlic, stewed tomatoes, chili powder, coarse salt, and fresh ground black pepper. Soup is simmered over very low heat for several hours to soften beans and blend flavors.

Preparation:
1. Pre-soak the 15 bean soup mix overnight according to package directions.
2. Drain re-hydrated beans.
3. Add beans, chopped onion, minced garlic, stewed tomatoes, chili powder, salt and pepper to large stockpot.
4. Cover stockpot and simmer on low 4-5 hours.
5. Add water or stock to soup, if the soup gets too thick.
