Ingredients :
- 4 Leeks, washed and finely chopped
- 4 tablespoons Extra Virgin Olive Oil
- 1 large Yellow Onion, finely chopped
- 3 cloves Garlic, diced
- 1 cup Tomatoes, chopped
- 4 stalks Celery, finely diced
- 4 stalks Carrots, finely chopped
- 8 cups Water
- 1 bunch Parsley, finely chopped
- 1 teaspoon Coarse Salt
Preparation :
- Add water to stockpot and bring to a boil. Add leeks and cook 20 minutes.
- Add onion, garlic, tomatoes, celery, carrots and parsley.
- Return to a boil, reduce heat to low and simmer 1 hour.
- Add salt and a splash of olive oil.
- Stir to combine ingredients, cover, and simmer another 30 minutes.
- Serve hot.
